Tiny Little Cupcakes

My first food related blog post - how exciting! I made some mini marzipan cupcakes today, just because, well, I love marzipan and there's something about them that reminds me of childhood. The cuppies turned out delicious. Best of all, they are easy and quick to make. The recipe for the cupcakes is my dad's and it's the best I've ever had.

✳ 300g marzipan
✳ 375g egg white
✳ 300g castor sugar
✳ 100g flour
✳ 250g butter
✳ vanilla sugar

1) Melt the butter and leave it until cool.

2) Put the marzipan and egg whites in a heatproof bowl, over a pan of hot water (au bain-marie). Stir the mixture constantly until it is melted.

3) Take the bowl out of the pan and continue to stir.

4) Carefully add the flour, castor sugar and vanilla sugar to the bowl & mix.

5) Add the melted butter and mix until a smooth paste.

6) Pour the mixture into paper cupcake liners.

7) Bake in a preheated oven (180°C), in the middle, until golden brown. 

8) Decorate (optional).
